In a large pot or slow cooker, pour in the apple cider and heat gently over medium-low.
Add the cinnamon sticks, cloves, star anise, orange slices, and brown sugar (if using). Bring to just under a simmer, then reduce heat and let it gently simmer/infuse for 20-30 minutes. This gives it that warm, fragrant holiday aroma and flavor.
While cider is infusing, set up your beverage bar with one dispenser or pot clearly marked “non-alcoholic”.
Arrange the spiking station beside it: let guests choose whether to add bourbon, spiced rum, brandy, etc. Provide small jiggers (1 ½ oz or so) for safe portioning.
Populate garnish bowls: cinnamon sticks, orange wheels, cranberries/pomegranate seeds, whipped cream & caramel. Encourage guests to top their drink as they like.
Serve warm. For the alcoholic version: pour the cider into a mug (≈ 8-10 oz), add the spirit (≈1½ oz or adjust to taste), then garnish. For the non-alcoholic version: omit spirit, optionally add whipped cream and caramel.
Add signage like: “Make it merry — spike it if you like it!” and “Family-friendly version here”.
